The very appealing light salmony pink Méthode Cap Classique. A delicate expression on the nose of citrus notes and hints of red berries. On the palate crisp freshness combines seamlessly with cassis richness and finishes with finesse. Fine continuous mousse kisses the palate and lifts the wine to a long elegant finish.

A classic blend of Pinot Noir and Chardonnay makes this a true MCC. A bouquet of toasted nuts, brioche, candyfloss and citrus speak of the passion involved in making a wine of such class. The palate is rich and complex, with classic flavours of baked bread and marzipan.

Montpellier MCC Rosé 2014

This dried, salmon pink MCC Rose is absolutely delicate with hints of strawberry, raspberry and yeasty mushroom forest flavours on the nose. It offers a long and refreshing mouth feel with Turkish delight and rose water bursting through on the palate. Best Served chilled with or without food and can be associated with luxury foods such as caviar, black and white truffles, oysters and the finest smoked salmon.

This vibrant MCC is rich with yeasty character. On the nose it is quite fruity with hints of dried apricot following through. The palate is well rounded and dry with flavours of dried banana, oak and granny apple.

Silverthorn The Green Man MCC 2015


Half human, half nature, the Green Man is an ancient mythical figure representing the spirit of the forest, the continuous regeneration of life and the interdependence of all things. He has appeared throughout the ages from as far afield as ancient Babylon, India, Borneo and Nepal, to abbeys and cathedrals all over Europe. He manifests in many forms, most commonly as a semi-human, foliate head, representing the fusion of man and nature. In his modern guise, The Green Man has appeared under a new name – Ecology. It is this spirit, as well as the delicate green hue of Silverthorn’s Chardonnay Cap Classique, that inspired winemaker John Loubser to break with traditional name ‘Blanc de Blancs’ and personify the wine with the name The Green Man.

Vibrant green/yellow hue – fine twirling bead of bubbles. Fresh aromas of green apple and acacia blossom backed up by subtle hints of minerality and whiffs of freshly baked brioche on the nose. The Plate is well balanced with an elegant structure, fine mousse which imparts a gentle explosion of bubbles and a long finish.

Silverthorn Jewel Box MCC NV


The Southern Cross, or Crux, is the best known constellation in the southern hemisphere’s skies, and also our favourite. It gave early explorers their bearings when travelling the southern oceans. Hidden within Crux is a fascinating deep-sky object known as Kappa Crucis. It is regarded as one of the finest open clusters in the Milky Way galaxy. Kappa Crucis adopted the nickname “Jewel Box”. When Dom Pierre Perignon, the Benedictine monk and so called father of Champagne first experienced the joys of sparkling bubbles vibrantly frothing out of a bottle of wine he allegedly and excitedly exclaimed ‘come quickly, I am drinking the stars’. We can honestly relate to this statement.

Light straw yellow with elegant fine bubbles. Complex aromas of roasted almonds, marzipan and subtle hints of strawberry and cherry compote followed by zesty citrus nuances on the Nose. The Palate is dry, rich and full – soft toasty creaminess with a beautiful weight.

Silverthorn The Genie MCC 2016


Richly entwined in Arabian folklore, Genies are best described as free-willed spirits formed from smokeless fire. Capable of using their power to create either magic or mischief, Genies were popularised in the Tales of One Thousand and One Nights.

Traditionally, Rosé Champagne is made form two red varieties, namely Pinot Noir and Pinot Minuer. With Silverthorn The Genie the rules were broken. Embracing the free-willed spirit of the Genie, something far more daring and exotic was opted for, using Shiraz, an ancient grape variety, originating from Persia. The results have been pure magic!

Bright onion skin – fine twirling bead of bubbles. Exotic bouquet of Turkish delight and rose water on the nose. The Palate has fresh raspberries and sherbet flavours supported by a velvety texture, fine mousse and a lengthy finish.

Strandveld Skaamgesiggie MCC 2015

This Méthode Cap Classique takes the name Skaamgesiggie or bashful Sugarbush as it is affectionately known, a very rare species of (Protea pudens) with unique downward hanging flowers. This timid flower is endemic to the Strandveld biosphere and is so endangered that it has been classified as a ‘red data’ species.
